billie beans

BILLIE BEANS
whenever we go to eat at a mexican restaurant
i always order charro beans
they are the best beans that are served

there is also a place in fredricksburg texas that cooks
a pot of beans that is done vegetarian
they are the best beans ive ever eaten
but
they wouldnt tell me how they cook them
registered or patented i guess

now beans are a healthy food
a good cheap source of protein
its the stuff that gets added to it that can make it
not as healthy

as i have learned more about a lifetime of our eating habits
and
how it can affect our hearts and brains later on in life
i have become more of a vegetarian every day
i say i am an 80% vegetarian
i eat eggs and cheese
i eat some meat usually turkey or chicken
but will eat bbq or a good hamburger if im out somewhere

so i have played around with my recipes for crock pot beans
over the last few years so that they are vegetarian
and
taste good
and
are more healthy for you than the heavy fat salty ones that are
usually served

now when i was in nicargua the cook there made local red beans
but all she did was add water and cooked them
the flavor was perfect
no salt or pepper was added

when i try this here they dont taste like hers
maybe its cause hers just came from fresh from their farm

so for dried beans here is what i do

now i get these white beans sent to me from california
from my mother in law
she gets them at a local mexican food market

we call them since her name is billie
billie beans
but
with the help of my rainwater brother we have identified
them as peruvian beans
but
we call them billie beans here at the country n

first i take a crockpot
put in a liner to decrease clean up
since i have to wash the dishes i want things easy

here are my ingredients

16 oz of billie beans
soaked over night in water and rinsed

1 box of central markets vegetable broth low salt kind
its organic and seems to have better flavor than the
nonorganic one

i add 1tbsp of olive oil and 2 tsp salt free butter
this seems to help the flavor like using meat provides
yes i eat butter
rule is if it comes from the farm and is raised like farmers
use to its ok

after about an hour or two
i add 1 chopped onion
a few pieces of chopped garlic
did you know if you put garlic cloves in the microwave for 15+-
seconds that their husks slide right off
seems 10 secs is best in my microwave
and
 1 chopped poblano pepper

all of these are from our garden and of course are organic
we still have some from last spring

when the beans have softened some
i add i can of mur glen organic tomatoes with peppers
again they seem to have the best flavor of the canned tomatoes
then
i add sea salt to taste
and
add coarse crushed black pepper quite liberally

the beans are cooked about 4-5 hours until they are soft
not mushy

the end results are these organic vegetarian billie beans
with great flavor

my wife she is a cornbread making machine
she cooks the cornbread in a cast iron skillet
yes she flips it

a perfect match with these beans
