THE EGG
the egg has been much maligned in the past few years
causing problems with cholesterol for one thing
thats all been much disproved since then
especially
if you eat a free range egg thats recently been laid
now some companies call theirs free range but somehow
the rules get bent some so they can call them free range
here at the country n our girls lay legs that are true
free range eggs
they get the full range of 10 acres of land thats all natural
and of course all organic
bugs worms grasshoppers
right now a lot of grasshoppers
seeds and grasses
as they make our compost from the leaves some of you
have given me they carefully pick out all the weed seeds
from the leaves so whats left is a weed seed free compost
good job girls
and
they give us those delicious free range eggs
we have a friend who we have tried to give her a dozen
of these eggs
now people beg for theses eggs
we usually give away any extras we have
except during the walk to end alzheimers fundraising time
then we give them away asking for a donation
she wont take them
well once we gave her some that werent cleaned real good
my wife she usually adds a feather in the carton just for
decoration
she did not want any of that
so
we still bring her the eggs which are quickly scooped up by
one of her sons
he knows how good they are
occasionally we have to buy eggs from the store
they im sorry even those labeled organic free range
taste like cardboard
if youve eaten a fresh egg you know what i mean
the yolk is even a darker orange color
here she goes to the store and finds them refrigerated usually
next to the milk
we in the us pasteurize our eggs steaming them to over 90 degrees
washing them real good
spraying them with a chemical sanitizer
that doesnt sound good does it
wonder if that stuff gets inside the egg
once thats done they have to be refrigerated
sometimes for months before you get them
now in europe
why do they seem to do things better than we do sometimes
they dont pasteurize their eggs
they leave that important cuticle that the girls put on them as
they are laid
this acts as a barrier to keep bacteria out of the egg
they do a better job of having a cleaner living areas for
the hens
here in the us have you been to a commercial laying house
the hens there are all also vaccinated against salmonella
which isnt done much in the us
so
their eggs will be found eg in the can good section or dry good
section of the store
the us eggs would not be allowed to be sold in europe
so which do you think might be a better tasting egg
the us egg or the european egg
i think i know from personal experience here at the country n
where we leave our eggs out on the shelf for days
a little chicken feather and a little debris doesnt bother us
i wonder if our friend ate eggs when she went to europe
i bet she did
and
she had no idea
